Dinner cooked by my husband?

How nice it is to wake up on Sunday in a hotel, 10 minutes from both soccer games… Breakfast is cooked and waiting, nothing to do, but grab a coffee, have an omelet specially prepared and sit and relax… Ahhhh Bliss!


The children love hotel life, so Blu and Mabel organize themselves, after a relaxing… But very filling breakfast we head to the pool, where Blu and Mabel splash around for a while, then, they head off to shower and we grab some coffee, hot chocolate and muffins and relax before our afternoon of soccer!


Both their games are in Madison, so we head to the High School for Blu’s game first.  It is a beautiful warm sunny October day, I then drop Mabel to Green Village for her game… We win both games…yay, and Mabel even scores 2 goals… 20 more dollars that Paul owes her now!  (for those of you that don’t know Paul is paying them $10 per goal they score…  So far, we are at, Mabel $50 and Blu $0).


Before we head home, we make a quick Starbucks stop… I swear we are all, and when I say all, I mean the children too, addicted to Starbucks these days!  Then its time to head home to dinner, cooked by Paul, Pjs and a nice glass of wine!


What’s for dinner in your house tonight?

Ours was a family recipe… Ha, ha… Well everyone loves this dish anyway, it’s so simple… And the children even the bigger ones beg us to make this…Paul can make this dish perfectly!

Skinless boneless chicken thighs ( it has to be chicken thighs as they are juicier, creating the sauce, which is the best bit, according to my children)

4 heaped tablespoons (Paul used 5, and whoaaa it was way toooo spicy for me, not that I was eating it, due to feeding Florrie) Cajun spices

1 pepper (any color you want) sliced into thin stips

1 onion chopped


Fry the veggies in oil for 10 minutes add the chicken thighs, either cut into small pieces or shred when cooked, then add the spices, toss together and brown in the pan, put the lid on, turn down the heat and carry on cooking, I suppose for about 30 minutes… Then what you will have is spicey Cajun chicken, moist and juicy and perfect for anything you want to serve it with… I like to use it in  a quesadilla, or just serve it with warm bread and a salad… Of course a glass of wine is perfect with it every time… Happy Cooking!
