Project runway…

I am going to mumble on today about a few of my favorite new foods we have tried recently… The first and my most favorite is a new salad mix from Costco, I am totally in love with this one, but unfortunately I have not been able to get it now for 2 weeks… Boo hoo! It is a super food salad made up of kale, shredded brussel sprouts and other great green leafy veggies, you add to that dried cranberries, pumpkin seeds and a poppy seed dressing… I am telling you, it is out of this world delicious!

Another first try for us is the puffed and lightly sweetened rice rolls from Trader Joes, OMG, so good for a light low calorie snack, especially when you are craving something sweet! They are the right amount of sweet and fill an empty hole in your tummy with only 45 calories per roll… Delicious and good for you!

A favorite in our house, especially with Mabel is quinoa, this has now replaced her love of cous, cous! Quinoa is a fabulous healthy grain that is so versatile and delicious mixed with salads and endless other dishes, last night I paired it with a warm chicken curry salad… Super healthy!

On the subject of new favorites, but on a slightly different subject… Cooking, I am loving making warm summer salads at the moment… with our BBQ not working at the moment, we are still deciding which direction to go with this one… An overhaul and service or a brand spanking new one? Anyway warm summer salads have been a food direction I have come to love, especially with this new salad mix made up of my hardy green leafy vegetables and raw sugar snap peas, add to that whatever you choose, beans, pulses, healthy grains then I have been topping the whole thing with the warm casserole I have made, last night it was chicken curry, the sauce acts as a warm dressing for the hardy raw salad and tossed together is delicious, slightly strange I know, but it really does work well!

Changing the subject now… Crafting has become a big addiction in my life, I have sewn a tepee playhouse for my Florrie’s 2nd Birthday, crocheted three sun hats and knitted a cocoon blanket in the last month. My ongoing project is a granny square blanket and now my new sewing project is an outdoor seat cushion for my old wicker sofa for the new deck area… I am loving discovering how much I love to create handmade things for the people I love in my life! It’s hard to believe that today is my baby girls second, yes I did say second Birthday… Wow that time has flown by so fast! So in honor of my gorgeous toddler’s Birthday I dedicate this blog to her today…

Florence is a funny, headstrong toddler, if she wants to do something and cannot she begins a little paddy but then will back down and be distracted, she loves to be just like her older siblings, so no baby plates or cups for her most of the time, oh no it’s the glass and china she prefers if she can get away with it! She gets excited when we pull into the Starbucks parking lot, poor child she has a Mommy with an addiction problem, she points and says fries when we drive past McDonalds and cheers when we get to Toys R Us! She is hysterical in any shop that has a toy department, ‘toys, toys’ she cries as she waddles down each aisle taking all her favorite things as she goes and placing them under the shopping cart!

She has names for all of her older siblings, Dom of course is Dom, Lewis has been her biggest challenge and at the moment is Chi-at, who knows why, Jord is unfortunately for him Jew, so funny as she shouted loudly at his place of work one day ‘Jew’ when she saw him, Farrel is Warrel, Blu is still Wab, who knows why she came up with that name as she can easily say Blu and Mabel is Abble. She has each and everyone of them eating out of her hand… Dom is her bedtime buddy, just like the Imagination Movers he has to get on the floor with cushions and blankets and do the bedtime routine, Farrel had to jump in the pink Cadillac in toys r us the other day, so funny 6 ft Warrel sitting in the electric pink car, each of them have to push her babies around in her toy pink stroller and Blu is her ball kicking playmate!

Isn’t it funny how she seems to realize that Mabel is her only sister, she loves to go into Mabel’s room and climb into her bed with her, and of course she is always on Mabel and Mommy’s shopping trips, her favorite thing when we hit the mall is to share Auntie Anne’s pretzels with her big sister as we go around all the shops!

She still loves to nurse, now I know the controversy over older children nursing but I love to cuddle her and she loves to snuggle, life is too short to judge others and our children grow up so fast… So this forty something mother is enjoying every minute of this little girls life, when she wants to stop, she will stop but for now she is still my little baby and I love it!

If it is at all possible, my love for this beautiful funny, little girl grows more and more each and every day, she has bought so much joy and laughter to each and every one of us it is hard to explain exactly how much love we all have for her. Any doubts I may of had about being a new mother again in my forties are completely gone, in fact if I could I would do it all again… I just love every single moment I spend with my gorgeous little Flower… Florrie you are one very loved little girl!



My favorite things to eat…

I am going to try and post my favorite recipe of the meal we have eaten in the last week, each Wednesday… This week I have two favorite recipes to share with you, both were very delicious and super healthy, I am trying to add chia seeds to all of our meals, more often than not I forget as I am usually doing my normal multi tasking Mommy act at this time of the day, but I will get into the habit soon… Fingers crossed!

Black bean and arugula salad with creamy avocado dressing

1/2 can of drained and rinsed black beans
5 small sweet baby peppers sliced
1 bag of arugula
1 small red onion finely sliced
1 handful of pea shoots chopped
1 handful of Cilantro chopped
1 avacado
2 tablespoons of lime juice
1 teaspoon of red pepper flakes
Salt and pepper to taste

Mix together the first 6 items, then take a ripe avacado and mash or blend in a blender for a few minutes with lime juice and about 1/4 cup of water then add red pepper flakes, salt and pepper, stir then coat your salad with your creamy dressing… Serve fresh with whatever takes your fancy, we had spicy Mexican pork with ours then a huge bowl of fresh strawberries for dessert… Healthy and very delicious!

White turkey chili with a twist

1 packet of ground turkey
Small amount of oil, I used spray coconut oil from Trader Joes
2 cups of chicken broth
1 tablespoon of cumin
1-2 tablespoons of red pepper flakes
1 small red onion finely chopped
3 small sweet peppers slice
2 large handfuls of spinach
1 can of cannellini beans drained
1 cup crumbled feta cheese
3/4 pack of orzo

Sauté the onion in the oil for about 5 minutes, then add peppers and sauté for another 5 minutes before adding ground turkey… Cook until browned then add spinach, let it slightly wilt before adding chicken broth, red pepper flakes, cumin and cannellini beans, bring to the boil, then turn down to a simmer then cover and cook for 30 minutes. Cook orzo according to the packet instructions, add the feta cheese, stir until slightly melted then when the turkey chili is cooked, combine it with the orzo and cheese mixture… Serve and enjoy!

It is Florrie’s second Birthday this coming Saturday, so after a long weekend filled with Anniversary, Mothers Day and Birthday celebrations, I am trying to concentrate on getting everything ready for my little flower to have a wonderful day too… This has meant finishing off her wigwam playhouse (tutorial to follow soon), shopping for cupcake supplies… Guess what cake she is having? and of course getting her some fabulous new princess pink toys! In a family as large as ours, parties don’t really need to be more than the people that are living in our house, well at the tender age of 2 anyway and that is about all I can cope with at the moment, I am sure next year maybe a different story!

Anniversary mumblings…

Twenty seven is a long time to be with the same person, but I firmly believe, and I hate to say it that change is how we keep our relationships strong… So today I am being rather indulgent and writing this blog more as a diary for myself, examining the changes I personally have gone through over the 27 years since I uttered those tiny words ‘I do!’

My inner self has grown and developed in many different ways that I honestly could not have believed to be true at the tender young age of 18, back then I was headstrong, vivacious but also shy and lacking confidence! Although today I have elements of that headstrong person, I will certainly argue my point, but honestly I do not care enough to crusade, not anymore, life really is too short and in all honesty everyone is entitled to their own opinion, so maybe by arguing my point I may have swayed them a little bit, but in the end I firmly believe in the saying ‘Live and let live!’ Now the younger me would not have agreed with that motto in life, I was always right and that was that!

People we meet along the way definitely change who we are, some people influence us much more than others, but some people can change our very being, improve our confidence and for those people I have been lucky enough to meet along the way I am truly thankful… Friendships have given me strength, confidence and long lasting support throughout my life so far.

I look back at the young me and wonder sometimes how I am so very different now, I never imagined I would have 7 children, back then I would have cared about what people thought, what they would have been saying, but now I really just think about us and the family we have become, believe me we have many, many faults, but along side those faults are support, understanding, caring and most of all an enormous amount of love… It really doesn’t matter whether you have 2,3 or 7 children your love for them equals no other and I have been lucky enough to have this with each and every one of my children and my husband too!

6 years ago I travelled 3500 miles to start a new life in a new country, this baffles me at times, the young me would never have dreamed this to be possible, not only the logistics of this whole move with 6 children, but the inner confidence to leave my home, my family the life I knew, and then have the confidence to learn new things, find my way and meet new people… All of these things I have achieved, Of course it would never have been possible without the support of a loving husband, we even decided it was time to add a new foreign (ha, ha) addition to our already large family and although at times this whole experience has been a lot of fun, there have been hard times that have come with our decision to be here too, but again the older wiser me knows these things help to shape who we are in our lives!

Family is one of the most important things in my life, I marvel each day at the love and support I have within my own family and beyond… I consider myself a very rich and lucky person to have so much love within my life!

To sum up this totally indulgent blog… I just want to say, although I by no means think I am perfect, in fact I am deeply critical of myself, the things I disliked about myself I have worked upon to try to change… I now try to learn new things and do not think I just cannot do that, I am working on finishing projects before starting others, I think deeply about buying things before just rushing ahead, I no longer blame others for my mistakes, I take full responsibility… I see myself as a work in progress, I would like to be more organized and tidy, healthier and craftier, but I realize now, you only get one life and you have to make the most of each and every minute, so why argue and sulk about things that tomorrow will mean nothing, just smile and move on… Because the one thing in this life I am truly sure about is… Blink and your children are grown up and we are getting steadily older, so life needs to be savored … And the best way to do that is to sit back pour yourself a large glass of wine and relax… Let life happen and enjoy it!
