Chopped Salads… 

I try my very hardest to eat healthy and cleanly as much as I can, of course it’s more difficult when you are out or busy but on the whole we eat a good healthy diet… this is a difficult thing to do when you have a large family of picky eaters.  Getting my two youngest children to eat well is a challenge, I believe in never forcing them to eat, but I do try and encourage them to try something, sometimes they love it, like Florrie with fresh peas at the farm when we were picking them,  she took one taste and loved them, but when I was spiralizing the carrots she asked to taste them and hated them straight away, the face she pulled was quite funny.  I have discovered recently that their best meal of the day is breakfast, they love fresh eggs fried with coconut oil every morning, and now we get freshly laid eggs from our neighbor next door, they are delicious, they love strawberries, raspberries, blueberries and watermelon, they love smoothies and homemade pancakes, Jamie Oliver’s one cup recipe, so simple and quick, they will eat these until the cows come home, they are also delicious when you swap the flour out for a gluten free flour too. I try most days to make breakfast their most important meal of the day as they eat really well, then I feel there  is not so much pressure for the rest of the day as I know they have eaten one good meal that day.


Lunch is another meal I kind of miss with,  it’s usually just me I’m making lunch for, my babies are happy to graze after a large breakfast, I kind of always fail for myself.  I make fresh salads for Paul and Mabel, but I always forget myself… I’ve come up with a new plan, Salad lunch prep for the week, I will make enough basic salad for a week, lettuce, tomato, cucumber and scallions,  a tip I have just learnt is to line your containers with kitchen roll paper to absorb the moisture, then daily using leftovers from dinner change each salad up daily, today we will be having a lemon rosemary roasted chicken, I’m having shrimp, with a kale Cesar salad and tortilla wraps, so I’ll shred some chicken, or add shrimp and add it to the salad and bake a couple of wraps to crisp them up to add to the salad… I’m hoping this will keep me on track instead of snacking with my children.  

I have recently discovered I absolutely love chopped salad, we have had it before a few years ago, recipes from Jamie Oliver again, but I really hadn’t thought about chopping every salad we have until I visited a new salad place that has just opened in a local town, in Chopt you pick your salad then they ask if you want it chopped up, Kale Cesar salad with tofu totally chopped up and it was totally delicious.  I thought I’d try it out on my family… huge success, they prefer their salad ingredients chopped up, but as you can imagine chopping 8 salads is very time consuming, each person likes certain things in their salads, so I’ve been tossing salad ingredients into separate bowls then emptying the bowls onto a board and finely chopping them… until last night when I came up with the genius idea of the food processor, you can start with the harder veggies like carrot and broccoli, pulse them a couple of times then add the rest of the salad ingredients, it worked perfectly, and it was a lot quicker, you just have to clean up the food processor bowl and blade, but not too bad.  So my chopped salads have been a huge success, my family are enjoying them so much they are saying they do not need the carbs along with their protein just the salad it’s so filling… My only problem now is how much Salad veggies I am getting through, but at least everyone is eating their greens, well except for one extremely picky eater, who likes everything as plain as it can be.


I’ll leave you on a sweet note… I was visiting friends for lunch yesterday, I usually take desert with us, but I’ve been in search for healthier sweet treats, some I’ve made have been ok, but just not quite right, yesterday I came across this recipe for Lemon coconut muffins, they were healthier because the sugar was very low, and could easily be swapped out for honey, or some other healthy substitute, they contained coconut oil and yogurt, I think they would even be good with gluten free flour instead of all purpose flour… they were a huge success both at lunch and at home, but be warned if you try these at home, the batter is extremely thick, she does say that on the recipe, but I was surprised at just how thick it was, I added a little more coconut milk just to loosen it a little… but despite that they will definitely be something I will be making again and again.

Really my camera is totally awesome and I never knew it!

Having made the decision to take my camera off of automatic mode I knew I had to get to grips with how the camera actually worked, everyone said the photos would improve and I would never want to go back, but I just couldn’t get my head around exactly what settings were for what.

I decided photography blogs and you tube should be my first port of call… I found an excellent video on you tube that explained all of those buttons and dials, that I had just ignored for so long… I suddenly could see what each button was called and exactly what it did, I watched it several times with my camera in my hand going through each button and dial as the guy in the video explained what it was and what it did.

Next I found some excellent photography for beginners blogs, I read, and reread them, aperture, ISO, shutter speed, I wrote notes and found cheat sheets on Pinterest… next I gave myself exercises to understand how each aspect of the exposure triangle worked with each other… when you reduce the ISO the shutter speed needs to be increased, and when you increase the ISO in darker situations you need to decrease the shutter speed, what I did not realize was that changing the aperture, F-stop would then affect both the ISO and shutter speed too… so much to think about.

I found an excellent guy on you tube who has created these fantastic short videos using his real life to explain everything from lighting to shutter speed and everything inbetween. Moose Winans sang to me, his videos are short fun and speak my language when it comes to photography, I love to sit watching his videos and they seemed to explain this complicated world of a DSLR camera to me.

This changed the way I set my camera, suddenly I began to understand a little bit more, I start with a setting of ISO 400 shutter speed of 320 and f-stop of 1.8, then I adjust it from there depending on whether I am inside or outside, if the light is good, if there is shade, I always change my ISO first, more of less depending on how much light I have I set my white balance to the type of situation I am in and then I look at shutter speed, moving it up or down until my white balance meter is set to either 0, just above + or just below -.

Once I gathered a little knowledge it was time to get a new lens, I wanted one with a lower F-stop than the two lenses I had, I wanted to take portrait photos both indoors and outside, I looked at both 35mm and 50mm, in the end I chose the 35mm, just because I like to take a lot of photos indoors, but I am now looking to invest in the 50mm too, just because I want something with a longer exposure for outside and I am now looking at the lens with a lower f-stop of 1.4.

I also decided it was time to switch from the basic photo editing software on our Mac computers and iPads, I looked at lightroom and photoshop, lightroom seemed easier to use, but photoshop although more difficult to learn could do much more creative effects that I would eventually like to do, so I found the monthly $9.99 deal for both online by reading blogs written about both lightroom and photoshop… after a little research I signed up and I am loving it.  There is so much advice online about settings for different types of filters you want to create, the list is endless and in lightroom it is so simple to achieve a look you require.

I have endless amounts to learn in all areas of photography, everyday I take my camera out and snap away changing the settings and experimenting with it, I then go onto lightroom and I am trying to learn how to change the photo for different filters, the above vintage setting is one of my favorites. I may have slightly over used it recently, but with my newly acquired skills I think I am allowed a little creativity over use.  I am tending to set the camera for a lighter setting, some might think it looks a little over exposed but I am loving the new lighter effect of the photos, I hadn’t realized quite how dark the photos looked on the auto setting of the camera… one of the bonus’ of setting your camera to manual you get to choose the settings exactly the way you want your photo to look.

I had read so many times that once you switch you camera off of Auto and start to really learn your camera in Manual mode you would never want to go back… As someone who has recently made the switch I don’t think I will ever go back, sometimes I second think my settings and panic a little, but usually I have made the right choice, so I should have more faith in myself…  everything I read was completely true… I have thought about doing this for a very long time, but always doubted myself, the Manual setting is so much more fun and you have complete control instead of relying on your camera guessing the type of photo you want… if I can do it, you can do it to… it wasn’t as difficult as I first thought and every day gets a little bit easier.

Anything your heart desires 💟

I cannot believe it has taken me so long to get my self organized, I’m not fully there yet, but I’m getting there.  Yesterday was the first time in a very long time that I got to sit down in a reasonably clean and tidy house and watch tv, I caught up on the show Welcome back Potter, Tate slept on my lap, Florrie was playing at her friends house across the garden from us, Paul was working and everyone else was out… peace and quiet time just for me… that is exactly what getting myself organized is all about.


I have realized I am just not happy and contented in disorganized chaos, I have no time as I’m always feeling there is something to do, which there normally is, but right now I’m content to look at toys sitting there as I know it’s a five minute job to clear it up, I’m happy to do my laundry as I’m so organized there is only a tiny pile, washed, dried and put away each day.  I have a lot to still do, but I can feel my house slowly returning to my true self.


My biggest problem is training my older children, shoes and clothes left anywhere and everywhere, food remnants scraped from their plates left in the sink… am I being too picky here? they are putting their plates in the dishwasher after all, but the clothes and shoes drive me crazy.  Florrie has discovered she likes things tidy and is my biggest helper, she loves emptying the dishwasher and knows exactly where everything goes, she loves cleaning, sweeping and mopping the floors, she could teach my older children a thing or two.


Anyway, the point of my story, enough of this rambling… I’m so organized this year I’ve actually organized my Christmas cards, they were ordered, printed and have arrived and it’s not even the middle of November yet, now this may seem pretty normal to all my organized friends out there, but to me it’s just so impressive, I am giving myself a huge pat on the back for this one… now all I’ve got to do is address the envelopes and mail them in good time for Christmas… fingers crossed I can get this done on my new organized schedule 🎅 

I think when all is said and done we can all change who we are, who we have been our whole lives it just takes a little work and belief in yourself that you can do it… I’ve even managed to fit in yoga and meditation into my busy schedule, I love it and hope I can continue the way things are right now.

Paleo lifestyle

Ive been playing around with a Paleo lifestyle for a while, it’s hard when you have no kitchen to be fully into it, it’s so easy to say I’ll grill some sausages and stick them in a bun just because you don’t have countertops, an oven, Stove top or dishwasher, but really right now I’m a little more equipped to start it full time, I have some countertops, soon to be a a lot of countertop space, I have the grill, a microwave and a multi task slow cooker, what more does a girl want?  My kitchen stuff is all still packed away, but I now have pantry space to buy and store ingredients like apple cider vinegar, coconut oil and all the staples for nutrition that I have there to hand usually, and my refrigerator is looking more sparse now I have cleared out all the pantry stuff I had no storage space for.

I am resuming my organic delivery once again this week Door to Door Organics, I love  to buy organic when I can and this delivery service is great for all things organic, I’ve been putting it on hold most weeks but it’s time to get my Paleo lifestyle kicked up a notch.

I’ve also cheated a little bit with my menu planning, I found a website with some Paleo recipes and I have just used these, so here we go, here is my menu plan for the coming week…

Left over night… My favorite night.

As with everything in life, things are never easy, and my family don’t make cooking for them easy at all, I have several picky eaters, myself who doesn’t really eat meat and then others who eat everything.  How do I cope with this I hear you ask when you are cooking for such a large family, well I have just learnt to adapt my cooking technique, meat cooked separately and added after to soups and some casseroles, veggies added after I’m dished up certain meals… You do what you can, and I will try to simplify this menu and make it work for everyone and their tastes as I go along.

Of course not everyone in my family wants to be Paleo, and although I think everyone will benefit from a little of this in their diet, I fully understand that I need to add a carbohydrate to our protein and veggies, so I will serve up a separate side dish with every meal, sometimes it will be noodles, other times rice, tortilla chips or even bread, whatever suits the meal I’m serving and also makes my life easier.

Feeding a large family the healthy way can be a challenge sometimes, but with a little planning it can work out in the end.

Just an idea…

I have fallen in love with photography… I have always loved to take photos, but mainly of my family and in the main when I processed my little roll of film some would be good and a lot would be bad.  In 2007 we moved over to the US and that was the year I got a DSLR, I think it was at that point my love of photography changed, the Internet was sitting there, there were websites like KODAK to share albums of photos to family and friends around the world, I think that was the change for me and little did I know back then how much I would grow to love this new world.


My family feel I post way too many photos on a daily basis and I will admit to being a little addicted.  So I was talking to Jordan the other day and he had the idea that I could set up a website gallery just for photography, he was saying he thought it would be good to just showcase a few of my very best photos, or the ones I thought were my best, I loved this idea instantly and have since been mulling it over in my mind… Ok I know I’m not the best photographer in the world, but some of my photos are decent, or at least I think they are.

Photography to me is like a link to my past, with 8 children I’m always so busy and I easily forget things, to me my photos link me to things I may forget, this sunflower for instance reminds me of two hot children wandering around a maze and a drip of sweat dripping down my back as the realization came to me that the day had turned out much hotter than I had expected it to be… Life 🌻

Happy Birthday sweet baby Girl 💟

Today is the last day my baby girl will be 4, her sweet face, her chubby cheeks and her cute little smile are only four for just today, tomorrow she will wake up and be a whole 5 years old… 

It’s crazy to think it was 5 years ago that I was planning to go into the hospital and meet my little girl… From the very first moment I saw her beautiful face I was totally in love and knew that this little girl was going to be very special in all our lives.  Today she is funny, smart and the bestest big sister a little brother could ever have.


Florence’s favorite thing to do is stay at home and play with her toys, she loves her toys so much, babies, Barbie dolls, kitchens, dolls houses, soft toys… the list is endless.  She loves to paint, draw, chalk and write letters.  Another of Florence’s favorite things is water, she loves to have a bath for hours upon end with all her toys joining her, she loves to play with water and most of all she likes to swim in water at the pool or at the beach, she is definitely my little water baby.


We have a crazy life with so many people living in our house, Florrie loves her siblings, each and every one of them, Mabel does her hair beautifully and paints her nails, Blu is just Blu with her and she adores him, her older brothers all adore her and in turn she has a special place in her heart for each of them.  Oh I must not forget our dog Simba, yes we do still have Simba and Florrie enjoys spending time with him.


Florence has been to dance classes which she loved, unfortunately the classes stopped and we now need to find another little dance school which we love as much as the last one, hopefully she will be starting dance again after the summer.  She is right now playing soccer, her Dad is the coach, she loves to run around play the games with the ball and meet the other girls.


This little girl makes me smile every day, she says the funniest things, she loves life and I’m glad at the moment I have chosen to homeschool her, it means I get to spend everyday with her, learning along with her, sometimes I teach her and other times she teaches me, more often than not it is her showing me something… She is crazy, funny, beautiful, but most of all she is simply amazing and we all love her to bits…

This, that and everything else.

IMG_3486I have always been a person that hates waste, I am known as queen of the leftovers in our house, I am constantly checking dates on food in the pantry, fridge and freezer and trying to use up all the food we have before I restock, well now I am even worse than I was before, I have reorganized my pantry and have itemized each category so that I know each time I use it I need to replace my staple items, pasta sauces, jars of tomatoes, pastas, rices and any grains are just a few items that have made my itinerary.  Another way I have reduced waste in my kitchen is by making bone broth once a week, I have a bag in my freezer for all my veggie scraps, onions, celery, carrots, ginger, anything really that I can throw in that pot of simmering bone broth, I also now try to shop for meat with bones and save any bones from any meat that I buy and cook up.

Friday is the day I throw all my scraps in the slow cooker covered with water and leave to simmer for anywhere from 24 to 48 hours, the reason I chose Friday was because Friday night is always pizza night in our house, so that means my crock pot is always free, as each person comes home in the evening they smell the broth cooking and go over to the pot to see whats for dinner, they lift the lid and pull a face as they look at a pot of scraps of food… its quite funny to watch.

I am a firm believer that we are what we eat, I may not have always practiced this, but as I grow older I want to keep my body in the best possible condition and that includes diet and exercise.  I have never really been one for intense exercise, I had a regular routine of step aerobics before I moved to the US, I had also dabbled in some yoga, and when I established myself here in the US I used to walk a lot around the town I lived in.  Since moving to our house we live in now 7 years ago and having had my two babies I have struggled to get into any routine of exercise, I am the type of person who puts a lot of pressure on myself to be perfect, I have had to learn to let this go, as I strive for perfection I create an image that is hard to maintain so I fail before I even try, and that is so often the case.  I want to be healthy, live in a nice environment and just be happy… but today I have learnt to just be happy with everything I am, and every day is a new learning day, and that is why when I am learning yoga I am not putting any pressure on myself I just do what I can, when I can, I am the same way about most things these days, homeschooling is the same, we do all the things we love to do, when we want to do them, Florence has taken a real interest in mermaids so this week we will look at under the ocean, and if the weather is kind to us we will go visit the zoo again and look in more details at the sea lions and other aquatic creatures that they have there.

I realize in life we need balance in all things, our health, our minds, our bodies and our spiritual well being, so I have decided to look more deeply into Holistic healing… I want to be balanced and it seems that together with learning yoga, holistic health could help balance not only me but make me a better person for each person in my family.  IMG_0635
