A quiet life… At last!

Life has been kind of quiet recently… Thankfully! I have been concentrating on learning to not spend money, all of my life I have been reckless with money and it’s just not a good thing, so right now I’m learning how to spend our money wisely… What that means for me is a lot more days at home not cruising the aisles in Target… Ha, ha! I have been completing projects that needed doing like hats for Florrie’s Attic, replacing all my cushion covers and a lot more home baking and cooking, which really gives me a sense of achievement when I feed my family wisely! My life is usually so busy and hectic I have really enjoyed some down time to get on with things I’ve wanted to do for a while!

After months of morning sickness we are finally back on track for a healthier diet, Mabel is very happy about this… I have been kind of menu planning, but not strictly, I have ideas of what our menu will be for the week and then I shop the basics and plan each day as I go. My favorite place for recipes at the moment is the whole foods app on my iPad, everything tends to be healthy and is easy to adapt to ingredients you have in. I am trying to bake sweet treats every day to help fill the gap with so many hungry children…

What we ate yesterday…

For breakfast Florrie and I had cereal, after that I prepared the pioneer woman’s pizza dough recipe, I had run out of olive oil so I substituted it with melted coconut oil, I wasn’t sure how it would work but I preferred it. I also put pumpkin chili in the crockpot, now this is a favorite of mine, but not such a favorite for my children, so the pizza was for them, I am loving homemade pizza at the moment, so easy and very tasty! My children are all so very fussy so I am now making very basic pizzas, last night was cheese and a chicken pizza, then I make up a salad and top mine with it, so good, last night I chopped some cherry tomatoes and shredded some baby spinach leaves, to that I added a tablespoon of red wine vinegar and salt and pepper, so yummy on the pizza! Finally I made some pumpkin oatmeal muffins, now I told my children they were apple as they think they do not like pumpkin, instead of sour cream I did add apple sauce, so I was not lying and they loved them, see they do like pumpkin, they just don’t know it!

Pumpkin chili in the crock pot

1 pack of ground turkey ( I used Costco fresh meat)
1 tablespoon of coconut oil
1 can of chopped tomatoes
1 can of pumpkin purée ( I used Trader Joes organic)
1 sliced red bell pepper (I used 1/2 packet of Trader Joes frozen bell pepper slices)
1/2 pack of frozen artichoke hearts (I used trader joes)
2 cloves of finely chopped garlic
2 tablespoons of chili flakes
1 tablespoon of cumin
1 teaspoon of paprika
1 can of drained black beans (or any beans you have to hand)
1 cup of red lentils 1 1/2 cups of water
1/4 cup of flour
2 handfuls of baby spinach leaves

Lightly brown the ground turkey with the oil and then add to the crock pot, then add the can of tomatoes, the pumpkin purée, the pepper, artichokes, garlic, chili flakes, cumin, paprika, red lentils and water, mix thoroughly and cook on low for 5 hours. After 5 hours whisk in the flour to thicken, and then add the beans and spinach, mix again and let this cook for another hour… Serve and enjoy with the topping of your choice… I like grated cheddar cheese, slices of avocado and sour cream!

Pumpkin oatmeal muffins

1/2 cup oatmeal
1 egg
1/2 cup unsweetened apple sauce
1/2 cup fat free milk
(1/2 stick) unsalted butter, melted
1 cup canned pumpkin
2/3 cup of brown sugar
1 cup all-purpose flour
1 cup whole wheat flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp fine sea salt
1/2 tsp ground cinnamon

Preheat oven to 400°F. Place paper liners in a 12-cup muffin pan.
In your mixer whisk together egg, apple sauce, milk, butter, pumpkin, brown sugar, then add flours, baking powder, baking soda, salt, cinnamon, and oatmeal and gently fold into egg mixture until just combined. Spoon batter into lined muffin tins and bake for 22 to 25 minutes. I then decided to melt 1/2 cup of semi sweet chocolate chips and 1 teaspoon of coconut oils and then drizzled it over the muffins!

Both of these recipes are adapted from the Wholefoods app… Very healthy and extremely tasty!

With the clocks going back last weekend and the evenings getting darker so much earlier, my evenings seem so much longer… How does that work, more hours in one day, more time to knit or crochet… Florrie’s Attic has some new things arriving very soon!

Trying to stretch a dollar or two…

This year has certainly been financially difficult for us, we have had several car accidents costing us a lot of money not only with paying the first $1000 but also with insurance rates increasing dramatically. We also had a chimney fire and parts of our roof were damaged with the hurricane that came last year… All in all 2013 has been a little bit of a struggle in many ways… But on the positive side, we still have each other and I firmly believe that positive thoughts breed positive behavior!

With that said with things the way they are at the moment I am all in for trying to save a little bit of money, I particularly love this time of year food wise, you can really make your dollar stretch with hearty, healthy meals, soups and stews are perfect fall money saving meals, lots of root cheaper veggies fill out all those fall meals, last night I made a delicious potato, green bean and chicken soup, served together with a rustic sausage, apple and sage stuffing bake, I estimate the cost to feed a family of 6, and I say 6 as that is how many people ate this dinner was $2.65 per person… Hearty, warming, yummy and very cheap! With this in mind, I am challenging myself to make healthy fall meals for less than $15 a night… Can it be done? Who knows but I am going to try, I love a bargain and I do love a challenge!

Very quick chicken and potato soup… I found this recipe on the whole foods App, I did tweak it a bit, so no link…. I love this app for healthy recipes, I use it a lot!

2/3 packet of frozen hash brown potatoes ( a trick I got from the Pioneer woman, when you just don’t want to peel and grate potatoes or just do not have time)
1 finely chopped onion
1 stick of celery chopped
2 cloves of garlic
1 1/2 teaspoons of paprika
4 cups of chicken broth
Salt and pepper to taste
6 ready cooked chicken tenderloins ( these are another of my short cuts, Costco have a large bag for $14, and are perfect for very quick healthy meals)
2/3 bag of frozen green beans ( the recipe actually said frozen peas and although I love peas my children do not, and as I wanted them to eat it, I changed to something we would all eat)

Place all of the ingredients into the pot, placing your chicken tenderloins on top, cover, bring to the boil then simmer for 10 minutes, then take off the chicken and chop or shred the meat, place to one side whilst you blend the contents in your pot, add in your green beans, top up with a little bit more water if you think the soup is too thick, bring back to the boil then simmer for 5 minutes then add your shredded chicken and simmer for a further 5 minutes… Time to serve… Delicious!
(Of course this recipe would also work well in your crock pot, I would place all the ingredients as stated in the slow cooker and cook on high for two hours, then follow the instructions for adding shredded chicken and beans but this time together, switch to a low setting and cook for a further hour).

I have always been a fan of repurposing things, I love Antique shops, thrift stores and flea markets, you can find so many hidden treasures… I don’t get to go nearly as much as I would like to these days. There was a time not so long ago when we used to spend Sunday afternoons in a little town called Lewis, near Brighton browsing the antique shops then drinking coffee in the quaint little coffee shops, of course this was when my boys were much younger and we just seemed to have far more time on our hands… Oh how I hunger for those lazy Sundays right now! I really think in this economy many people have turned to making and repurposing things within their homes… In the days of Margaret Thatcher, life became about the money and the possessions you had… Keeping up with the jones’ was the phrase of the day, and for some this is still very much the way things still are… I have never been like that, my style is shabby chic, I don’t care if something is designer and expensive or cheap and second hand… If I like it, that is all that counts! All this is a very fortunate trait , as right now I am very keen on making, creating and repurposing to create things I love for those that I love!

On a side note… Florrie’s Attic has taken a back seat in the last few months, due to the dreadful first trimester sickness, it was as much as I could do to get out of bed and cope with my family let alone think about my beloved Florrie’s Attic… But now 16 weeks later I think I am finally feeling a little bit better and my head is buzzing with all things Florrie’s Attic… First I have to complete some projects I had already started and post them up, then I will be moving on… Look out little boys things will be being added very soon… Some things are just meant to be!

Fall roasted peppers for dinner!

As with any love affair you must revisit your love many times to satisfy that yearning deep within… So with passion deep inside I travelled 40 miles east to Ikea once again, this time I was armed with a list and budget of money to spend, my theory was that if I knew what I wanted and how much I wanted to spend, I would not be tempted to give in to frivolous items that I just want because they are so cute! I hear you all ask did my theory actually work, well the answer to this is yes and no, I did stick to my list… Fabric, curtains, cushion, throw, but then I did add in a couple of ‘I just want them’ items… Cute white cups, a roasting tray, tea towels and then some salt and pepper shakers, so all in all I think I was very reserved with my Ikea purchases… But who knows next time, I see many, many, many more trips to satisfy this new love affair’s yearnings!

I must return to the subject of food once more… Tonight was Jamie’s roasted peppers, chillies and tomatoes for dinner on my weekly menu plan, even with my trip to Ikea I stuck to the plan and I am so glad I did, after 2 very bland Ikea hotdogs for lunch I was yearning for some food with flavor and all I have to say about this meal is Absolutely Delicious with a capital D… Thank you Jamie!
